This is a fairly simple home-style version of Bajan Curry Chicken, for a more complex version see my recipe for Bajan curry chicken 2
Ingredients:
1kg chicken, cubed
1 large onion, chopped
1 garlic clove, finely chopped
2 tbsp. olive oil
2 tbsp tomato purée
4 spring onions, chopped
2 potatoes, peeled and cubed
salt and freshly-ground black pepper, to taste
1 tbsp Bajan spice mix
2 tsp curry powder
Method:
Season the chicken pieces with salt and black pepper. Set aside as you prepare the other ingredients.
Place a pot over medium heat. Once hot add the onions and garlic and sauté for 3 minutes. Now add in the seasoned chicken. Stir to combine with the onions, cover the pot, reduce the heat and allow to simmer gently for 5 minutes so the meat releases its juices.
Now stir in the tomato purée, the Bajan spice mix the curry powder and cubed potatoes. Add a little water, bring to a simmer, cover and cook for about 20 minutes, or until the potatoes are tender. Stir occasionally during this time and top up the water as needed so you end up with a thick gravy.
Stir in the spring onions and cook for 3 minutes more. Adjust the salt to taste and serve accompanied with rice and fried plantains.
