Baileys Truffles a Classic American recipe for a Christmas treat or home-made gift of chocolate truffles flavoured with Baileys Irish cream that are coated with white chocolate.

Ingredients:

500g milk chocolate, chopped
400g creamy chocolate frosting
1 tbsp Baileys Irish cream
500g white chocolate (for coating the truffles)

Method:

Melt the 500g milk chocolate, either in a bain-marie (double boiler) or in a microwave, stirring until smooth and evenly melted.

Take off the heat and stir in the chocolate frosting and the Baileys. Stir until smooth then chill in the refrigerator over night for the mixture to set.

Use a melon baller to scoop the mixture into balls. Set these on a plate and chill in the refrigerator.

Melt the white chocolate in a bain-marie (double boiler). Allow to cool slightly, then stick the milk chocolate truffles on a cocktail stick and dip in the white chocolate to coat.

Turn out onto a sheet of greaseproof (waxed) paper, to harden. If giving as a gift, or if you want a prettier effect, drizzle a little melted dark chocolate over the top to yield a pattern.
