Bahamian Bread Pudding

This is a Bahamian version of the classic British 'Bread and Butter' pudding, but with the addition of fruit and without the butter.

Ingredients:

600ml milk
50g cherries, chopped
1/2 tsp mixed spice
100g brown sugar
2 eggs, slightly beaten
50g seedless raisins
1/2 tsp vanilla extract
4 thick slices of stale bread, cubed

Method:

Whisk together the eggs and milk in a bowl then add the bread cubes and stir in the remaining ingredients. Pour the mix into a round oven-proof baking dish and set in a roasting tin.

Add boiling water until it comes half way up the baking dish then place in an oven pre-heated to 180°C and bake for about 45 minutes, or until the pudding has set and a skewer inserted into the centre emerges cleanly.
