Rosti
Rosti is a traditional Austrian recipe for a classic fried potato cake made from grated potato blended with onion, bacon and smoked cheese that is often served by itself, but which can also be served as an accompaniment. Though most-closely associated with Switzerland, potato rostis are made throughout the region known as
mitteleurop (Central Europe) and this particular version comes from Austria.
Ingredients:
750g potatoes, scrubbed
1 small onion
4 rashers of smoked streaky bacon
60g Austrian smoked cheese
45g butter
salt and freshly-ground black pepper, to taste
basil sprigs, to garnish
Method:
Place the potatoes in a pan of cold, salted, water. Bring to a boil, reduce to a simmer and cook for 5 minutes.
Remove the pan from the heat then drain the potatoes and allow to cool before peeling and coarsely grating. Coarsely grate the onion and mix with the potatoes in a large bowl.
Remove the rind from the bacon then shred the rashers finely. Cut the cheese into small dice then add to the potato mixture with the bacon. Using two forks toss the ingredients to combine then season to taste with salt and black pepper.
Melt the butter in a large frying pan, add the grated potato mixture and cook over medium heat for about 12 minutes. Press the ingredients thoroughly together then carefully turn the mixture over and cook on the other side for a further 5 minutes.
Turn the rosti out onto a warmed plate, cut into wedges and serve immediately, garnished with basil sprigs.
