Australian Damper

This is the classic bread made by Australian drivers in the outback. Traditionally it's cooked over hot cols and it makes a fantastic camping or barbecue bread.

Ingredients:

300g plain flour
5 tsp baking powder
1 tsp salt
1 tsp butter
1 tsp sugar
250ml milk (fresh, or reconstituted powdered milk)

Method:

Mix together all the dry ingredients in a bowl then add the butter and the milk. Mix together to form a dough, then knead for about 5 minutes, or until smooth and elastic.

Wrap the dough in a double layer of well-greased kitchen boil then place in the coals or embers of a camp fire (or barbecue) and cook for about 40 minutes, or until done through.

Of course, you can also prepare for the oven.

Mix together the flour, baking powder, salt and sugar in a bowl. Rub in the butter then add the milk and work the ingredients together to form a dough. Knead well for 5 minutes then shape into a ball and flatten slightly.

Sit on a greased baking tray then transfer to an oven pre-heated to 170°C and bake for about 30 minutes.

Traditionally this is served warm, sliced thickly and topped with butter, golden syrup or jam (or vegemite to make it truly Australian).
