Dampers are the classic soda breads of the Australian outback, the breads of the Australian drovers... all are derived from the basic Irish soda breads and were originally cooked in a campfire (indeed, they taste better if made that way). This version, however, is adapted to be cooked in an oven.

Sift together the flour and salt into a large bowl. Add the butter and rub into the flour with your fingertips until the mixture resembles fine crumbs. Now stir in the cheeses, garlic and chives with a fork.
In a jug mix together the milk and water. Form a well in the centre of the flour mix, add the liquid (reserve some for the glaze) and mix the ingredients together to form a soft dough.
turn the resultant dough onto a lightly-floured work surface and knead lightly, until smooth. Press the resultant dough into a round then sit on a lightly-greased baking tray.
Glaze the top by brushing with the leftover milk and water mix then sprinkle over the 1 tbsp Parmesan cheese.
Transfer to an oven pre-heated to 220B0;C and bake for about 18 minutes, or until nicely cooked and golden brown on top.
Remove from the oven and transfer to a wire rack to cool.
Serve warm, sliced thickly and served with plenty of butter.
