Ataanme Nmliche (Tiger Nut Pudding)

Ataanme Nmliche (Tiger Nut Pudding) is a traditional Ghanaian recipe for a classic dessert of tiger nut milk thickened with rice flour that is often coloured before being allowed to cool and set. Method:

Combine the tiger nut flour in a bowl with 400ml water. Use your hands to squeeze the flour in the water to extract as much of the 'milk' as possible. Set aside to soak for 20 minutes.

After this time strain through a fine-meshed sieve lined with a double layer of cheesecloth (muslin). Discard the solids, mix the liquid with the rice flour then turn into a saucepan.

Bring gently to a simmer, add a little salt then cook, stirring constantly, for about 12 minutes or until the mixture thickens.

Take off the heat and allow to cool slightly then pour into individual dishes and put aside to cool and set before serving.

It is traditional to colour the mixture and it's typically served in glass dishes. Often three colours are used and these are layered on top of each other (black, pink, yellow and white are the usual variants).
