Arroz con leche sin azúcar de absorción rápida (Sweet Rice Pudding, made by Rapid Absorption): A Spanish recipe for a rice pudding made by boiling rice in milk flavoured with cinnamon and lemon zest and sweetened with honey or sugar.
Combine the milk, cinnamon and lemon zest in a saucepan and bring to a boil. Thoroughly wash the rice in cold water then add to the boiling milk, reduce to a simmer, cover and cook, stirring occasionally for 18 minutes.
Take the rice mixture off the heat and sweeten to taste. Set aside to cool then chill in the refrigerator for at least 90 minutes before serving.
Arrange the rice pudding on a plate, dust with ground cinnamon and serve.
