Arroz con Chorizo (Rice with Chorizo) a Classic Ecuadorian recipe for a one-pot dish of chorizo sausage, vegetables and rice in a tomato base with red onion and bell pepper thickened with egg tortillas.

Ingredients:

15 chorizo sausages, sliced into rounds
60g cooked carrots
60g cooked peas
500g long-grain rice
150g tomato purée
1 red onion, peeled and chopped
1 bell pepper, chopped
2 garlic cloves
2 egg tortillas
coriander (cilantro) leaves, to taste

Method:

Combine the onion, bell pepper, rice and garlic in a large pan with 250ml water. Bring to a boil, reduce to a simmer and cook, stirring constantly, for 15 minutes. Stir in the tomato purée, add the chorizo pieces and cook for 5 minutes.

Now add the carrots, peas, chopped tortilla and the coriander leaves. Stir to combine, allow to heat through then season to taste with salt and serve.
