Arroz con Camarón (Rice with Prawns) a Classic Ecuadorian recipe for a one-pot dish of prawns, onion and red bell pepper that are fried and finished with rice in a water base.
Ingredients:
500g prawns (shrimp), shelled and de-veined
1 onion, finely chopped
1 red bell pepper, chopped
6 tbsp oil
1 tbsp parsley, chopped
900g long-grain rice
1 Maggi cube
1/2 tsp chilli powder
1/2 tsp ground cumin
salt, to taste
Method:
Season the prawns with a little salt and chilli.
Heat the oil in a saucepan then add the prawns and fry until they turn pink. Nw add the onion, chilli powder, bell pepper, parsley and cumin. Continue to fry the mixture for a few minutes more.
Wash the rice well, add to the pan and stir to coat in the oil. Add enough water to cover the rice by about 2cm, bring to a simmer, cover the pan and cook for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
Serve immediately.
