Apricot Char-grilled Mackerel a Classic Fusion recipe for a barbecue dish of mackerel marinated in an apricot sauce that are cooked over hot coals and served with an apricot dressing.
Ingredients:
4 mackerel
400g tin of apricots in natural juice
3 tbsp dark muscovado sugar
3 tbsp Worcestershire sauce
3 tbsp soy sauce
2 tbsp tomato purée
1 tsp ground ginger
dash of Tabasco sauce
1 garlic clove, crushed
salt and freshly-ground black pepper, to taste
Method:
Clean, gut and scale the mackerel. Pat the fish dry with kitchen paper, then arrange in a large, shallow, dish.
Drain the tinned apricots (reserve the juice). Roughly chop half the fruit and set aside.
Place the remaining apricots in a blender with the sugar, Worcestershire sauce, soy sauce, tomato purée, ginger, Tabasco sauce and garlic. Process this mixture until smooth.
Pour this sauce over the fish, turning them to coat evenly in the sauce. Cover and set aside to chill in the refrigerator for at least 40 minutes.
Transfer the mackerel to an oiled barbecue rack over hot coals. Cook the fish for about 3 minutes per side, or until just cooked through.
Spoon any remaining marinade into a saucepan. Add the reserved chopped apricots and about half of the reserved apricot juice. Bring the mixture to a boil, reduce to a simmer and cook for 2 minutes.
Arrange the mackerel on a serving dish and serve accompanied by the sauce.
