Apple and Cream Pie

Apple and Cream Pie is a traditional American recipe for a classic apple pie baked on a shortcrust base that's filled with apples and a light cream custard and which makes an excellent dish for Thanksgiving. Ingredients:

500g apples, peeled, cored and thinly sliced (weight after slicing)
200g white sugar
1 tbsp plain flour
3/4 tsp freshly-grated nutmeg
1 tsp ground cinnamon
60g butter, melted
400ml single cream
1 egg, beaten
2 tsp cornflour (cornstarch)
250g sweet shortcrust pastry (ie made with 250g plain flour)

Method:

Prepare the pastry according to the recipe, turn out onto a lightly-floured work surface and roll out until large enough to cover the base and sides of a 22cm diameter pie dish. Cover with parchment paper, fill with baking beans then transfer to an oven pre-heated to 190°C and bake blind for 5 minutes. Remove from the oven then take out the paper and baking beans.

Allow the pastry to cool then mix together the flour, sugar, nutmeg and cinnamon. Arrange the apple slices in layers and scatter a little of the flour mix evenly over each layer, until all the mixture has been used.

Beat the cornflour and 2 tbsp of the cream to give a smooth slurry. Beat this into the remaining cream along with the egg and melted butter then pour over the apples. Transfer the tart to an oven pre-heated to 190°C and bake for about 35 to 40 minutes, or until the pastry is golden and the filling has set.

Allow to cool before slicing and serving.
