Apple Coleslaw: Classic British recipe for a coleslaw made from a blend of white and red cabbage, carrots, celery, bell pepper and apple in a lemon juice and honey dressing.
Ingredients:
120g white cabbage, finely shredded
50g red cabbage, finely shredded
2 carrots, grated
1 tart apple, cored and chopped (do not peel)
75g celery, chopped
75g green bell pepper, chopped
60ml olive oil
2 tbsp lemon juice
2 tbsp runny honey
1 tsp
celery seeds
Method:
Combine the cabbages, carrots, apple, celery and bell pepper in a bowl then toss to mix. In a small bowl, whisk together the olive oil, lemon juice, honey and celery seeds. Pour over the vegetable coleslaw mix then toss to coat.
Chill and serve.
