Appetizer Pate Cheesecake

This is an interesting version of a savoury (rather than sweet) cheesecake. A style of starters (appetisers) that's becoming increasingly popular.

Ingredients:

180g crushed plain croutons
3 tbsp melted butter
1 sheet gelatine
120ml cold water
240g cream cheese (or you can use my home-made cream cheese recipe to prepare your own)
240g braunshweiger or liver sausage, diced
60ml mayonnaise
3 tbsp chopped pimento
1 tbsp grated onion
1 tbsp Dijon mustard
1/2 tsp lemon juice

Method:

Combine the croutons and butter and press into the base of a 22cm springform pan. Bake in an oven pre-heated to 180°C (180°C fan/350°F/Gas Mark 4) for 10 minutes.

Soften the gelatine in the water and stir over low heat until dissolved. Combine the cream cheese and sausage, mixing until well blended. Gradually add the gelatine to this mix then stir-in the remaining ingredients and pour over the crust. Chill until firm then remove the rim of the pan. Chill again and serve.
