pinch of salt
125ml white wine
1 egg, separated
1 tsp butter, melted and cooled
4 apples, peeled, cored and cut into thick rings
clarified butter, for frying

Method:

Sift together the flour and salt into a bowl. Add the white wine and combine to form a thick batter then stir in the egg yolks and the melted butter. Beat the egg white until stiff then fold into the batter.

Heat clarified butter in a frying pan, dip the eggs in the batter, to coat, then add to the pan and fry on both sides until golden. Pour over the alcohol and set alight. Serve the fritters as soon as the flames have died down.
