Ingredients:

2 fresh thyme sprigs
1 bay leaf
50g flat-leaf parsley
4 spring onions, chopped
10 garlic cloves, chopped
1 Scotch bonnet chilli, chopped
6 small Caribbean seasoning peppers (or mixture red, yellow or green pimento peppers), chopped
½ onion, chopped
400ml olive oil

To make the Antigua green seasoning, blend all of the ingredients together with a hand blender or in a food processor. Keep in a screw-top jar in the fridge.

Method:
