Antiguan Pepper Shrimp is a popular dish in Antigua and Barbuda, known for its spicy and flavorful taste. This dish is perfect for seafood lovers who enjoy a little kick in their meal.

Ingredients:

500g large prawns, peeled and deveined
2 tbsp olive oil
1 onion, finely chopped
3 garlic cloves garlic, minced
1 scotch bonnet chilli, finely chopped
1 tsp paprika
1 tsp fresh thyme leaves
Salt and freshly-ground Black pepper, to taste

Method:

In a wok or deep frying pan heat the olive oil over medium heat.

Add the chopped onion, minced garlic, and scotch bonnet pepper to the pan. Stir-fry until the onions are translucent.

Add the prawns to the pan and season with paprika, thyme, salt, and black pepper. Cook for 3-4 minutes or until the prawns are pink and cooked through.

Take off the heat and serve hot.
