Amashaza mu gitoke (Peas with Plantains) is a traditional Ugandan recipe for a classic dish of peas and plantains served in an onion, tomato, chilli and palm oil sauce. The full recipe is presented here and I hope you enjoy this classic Ugandan version of: Peas with Plantains (Amashaza mu gitoke).
Soak the dried peas in plenty of water for several hours. Drain and place in a pan. Add water to come to 5cm above the peas, bring to a boil and cook for half an hour before adding the plantains. Simmer for about 25 minutes, until the plantains are done.
Meanwhile add the palm oil to a frying pan and fry the onions, tomatoes and chillies for abut 5 minutes before adding to the tomato and pea mixture. Cook until the sauce thickens then serve as an accompaniment.
