Alaisa fa'apopo (Samoan Coconut Rice)

Ingredients:

1kg white rice, (preferably jasmine rice)
1.5l water
2 tsp salt (or, to taste)
800ml (2 tins) coconut cream

Method:

Place the rice in a bowl, rinse well then transfer to a saucepan and pour over the 1.5l water. Season with the salt, place over high heat and bring to a boil, stirring constantly.

Cover the pan, reduce the heat to its lowest setting and cook for about 10-15 minutes, or until the rice is tender and looks a little gloopy.

Whilst the rice is still hot (leave the heat on low), add some coconut cream and start mashing.

Add a bit more coconut cream and keep mashing. Taste the rice and add more salt if necessary (to taste).

Continue adding coconut cream and mashing until you've used up all the coconut cream.

Taste the rice again. Is it good? Is it mashed up and sticky but not too wet? Do you like the amount of salt in it? Can you taste the coconut cream flavour?

Tweak the ingredients until the rice suits your taste. At this point take off the heat and serve.
