Akoho sy Voanio (Chicken in Coconut Milk) is a traditional Malagasy (from Madagascar) recipe for a classic dish of fried chicken served in a coconut milk, onion and tomato sauce flavoured with cayenne pepper and ginger. Ingredients:
1 chicken, cut into bite-sized pieces
juice of 1 lemon
1 tsp grated lemon zest
salt, black pepper and cayenne pepper to taste
2 onions, chopped
2 garlic cloves, minced
3 tomatoes, chopped
2 tsp ground ginger
250ml coconut milk
oil for frying (coconut oil preferable)
Method:
Mix together the chicken, lemon juice, lemon rind, salt, pepper and cayenne in a large bowl and set aside to marinate for a few hours.
Heat the oil in a large casserole pot and fry the onion and garlic in this for a few minutes before adding the chicken. Continue cooking until the chicken is almost done then reduce the heat and add the tomatoes and ginger. Stir for a few minutes before adding the coconut milk.
Allow to simmer over low heat until the chicken has fully cooked and the sauce is thickened. Serve on a bed of rice.
