These are British ‘chips’, thicker than American Fries and ideal to accompany fish and steaks. Here you are looking for something that is thicker than American fries but thinner than really thick ‘slap’ chips from fish and chips shops. I like potato skins so I just wash them and then cut with a knife (if you want more regular pieces trim the potatoes into a box then cut). Personally, I like a light coating of oil, for which I mix vegetable oil and water in a spray bottle and spray on the sliced potatoes. I am also a fan of a little flavouring, for which I use a little salt, freshly-ground black pepper and smoked paprika. Though sometimes I may use curry powder (medium Madras, my wife’s preference).
I have recently bought an air fryer and I’m in the process of trying out recipes and practising new ones. I have a Wilko 4l 1400W model with a removable basket. It has mechanical dials for timer and for temperature, going from 80-200°C in 20C increments. This model is sufficient to cook full meals for two people.
Ingredients:
600g (1 1/3 lbs) potatoes
spray oil
seasonings (salt, black pepper, smoked paprika)
Method:
Slice the potatoes up — thick for regular chips, or thin for French fries. You can either peel the potatoes, or give them a good scrub and leave the skin on (as I usually do).
Pre-heat your air fryer to 200°C (400°F) and allow to heat up for 5 minutes.
Wash your potatoes in cold water to remove excess starch. Pat dry with kitchen towel or a tea towel, put in a bowl and optionally spray with some oil. Sprinkle with seasoning of your choice (chip seasoning, curry powder, paprika, salt and freshly-ground black pepper).
Transfer to the air fryer basket and cook for 20 to 25 minutes, checking regularly and shaking/turning then often. Depending on the thickness of the chip, or how crispy you like them, you might want to cook them for longer.
