Here is a quick breakfast recipe cooked in an air fryer of mushrooms stuffed with sausage, cheese and spring onion topped with mozzarella.

Ingredients:

400g (16 oz) whole white button mushrooms
225g (1/2 lb) sausage (cooked)
40g (1/3 cup) cheddar cheese (grated)
1/4 tsp garlic powder
1 teaspoon smoked paprika
1 spring onion (thinly sliced)
8-10 tbsp grated mozzarella cheese
Salt to taste

Method:

Wipe your mushrooms clean (do not wash them with water, as they will absorb the liquid). Remove the stems from the mushrooms.

Pre-heat your air-fryer to 175°C (350F) for 5 minutes.

In the meantime, prepare the stuffing. Crumble the cooked sausage into a bowl them mix in the cheese, the garlic powder, smoked paprika, spring onion and season to taste with salt.

Use a teaspoon to carefully stuff the mushroom with the sausage mixture. Finally, top with the mozzarella, tamping everything down. Transfer the stuffed mushrooms to your air fryer basket, arranging them in a single layer. Cook for 10 minutes, or until the mushrooms are browned and cheese on top is golden and crispy.

Remove the air fryer basket and let it rest for a minute or two. Serve and enjoy your air fryer stuffed mushrooms.
