In all the lists of what you shouldn’t cook in the air fryer ‘tender leafy greens’ appears near the top. This is mostly due to the risk of light greens being caught in the airflow, flying to the element and burning. However, if you have a cake tin and make a foil lid for it you negate these issues and you
can prepare wilted spinach in the air fryer. Personally, I would add 1 tbsp soy sauce (because I like it) and if you want it, simply add as an extra to the recipe below. For even more flavour you could stir in a pat of butter at the end.
Ingredients:
500g (1 lb) fresh, washed spinach
½ onion
1 garlic clove
1 tbsp olive oil or rapeseed (canola) oil
Pinch each of salt and ground black pepper
Method:
Preheat the Air Fryer to 175°C (360℉) with a cake tin inside.
In the meantime, finely dice the onion and mince the garlic
Add olive oil to the cake tin then sit the onion and garlic inside. Stir then close the air fryer lid and cook for 2 minutes
Wash the spinach and add as much of it as you can fit into the cake tin. Stir to coat the first layer of spinach with the onion and garlic mixture before loading up the pan. Cover with a sheet of foil, crimping it to the edge.
Place in your air fryer and for 1 minute if you have more spinach to add. Remove the lid, stir the spinach then add the remaining spinach. Otherwise, if you only have enough spinach to pack into the cake tin in one go cook the spinach for 5 minutes and stir it through halfway through the cooking time.
Seasons to taste with salt and freshly-ground black pepper and serve immediately.
