Spaghetti squash is a really amazing set of cultivars, where the flesh, once cooked, separates out into spaghetti-like strings. Spaghetti squash or vegetable spaghetti is a group of cultivars of Cucurbita pepo subsp. pepo. They are available in a variety of shapes, sizes, and colours, including ivory, yellow and orange, with orange having the highest amount of carotene. Its centre contains many large seeds. When raw, the flesh is solid and similar to other raw squash. When cooked, the meat of the fruit falls away from the flesh in ribbons or strands that look like, and can be used as an alternative to, spaghetti. As spaghetti squash can be roasted, it is easily adapted to air fryer cookery.
Ingredients:
1 small spaghetti squash (approximately 600g (1 lbs, 5 oz)
1 tbsp vegetable oil (I used rapeseed/canola)
salt and freshly-ground black pepper, to taste
Method:
Rinse the spaghetti squash with water and dry with paper towels or a clean kitchen towel. Cut the squash lengthwise and scoop out the seeds. An ice cream scoop works well to remove the seeds, but a regular spoon will do.
Brush each squash half with ½ tbsp of oil and sprinkle with salt and black pepper.
Place the squash halves, cut side up, in your air fryer basket. (If you use a large squash, you may have to cook one half at a time.) Transfer to your Air fryer and cook the squash for 25 minutes at 190°C (375°F).
Once cooked, remove the squash from the air fryer. Let the squash cool a little, then remove the squash strands from the squash skin with a fork. The spaghetti-like strands should scrape out easily when the squash is properly cooked.
