Sausage rolls are great, quick to make and they can be sized to whatever you like. So you can have small ones as finger food or large ones as a more substantial meal. I have had sausage rolls in the UK, India, Nigeria and South Africa and have had them made for me by Australians and New Zealanders. The traditional filling is pork sausage meat, but beef or mutton are common in South Africa and goat is found in Nigeria. For the air fryer I use my air fryer savoury shortcrust pastry with an egg wash to give the finished product a shine. In the recipe below I’m providing a range of fillings.

Ingredients:

For the Pork Sausage Meat Filling:
500g (1 lb) pork sausage meat
2 tsp dried oregano, crumbled
salt and freshly-ground black pepper, to taste

For the Nigerian Filling:
500g (1 lb) pork sausage meat or 500g (1 lb) minced (ground) goat meat (use a fattier cut)
1 tsp freshly-grated nutmeg
1 dry stock cube, crumbled

For the Beef/Mutton South African Filling (the spices are those for Boerwors sausage):
500g (1 lb) minced (ground) beef or mutton (use a fattier cut)
¼ tsp ground dried mandarin orange zest
½ tsp ground coriander seeds
¼ tsp ground allspice
¼ tsp freshly-grated nutmeg
salt and freshly-ground black pepper

For Indian Sausage Rolls:
450g (1 lb) minced (ground) pork or mutton (goat)
½ tsp ground cumin seeds
¼ onion, minced
2 garlic cloves, minced
1 tbsp freshly-grated ginger
½ green chilli, finely chopped
½ tsp chilli powder
1 tsp garam masala
salt and freshly-ground black pepper

For the Sausage Rolls:
150g (1/3 lb) air fryer savoury pastry dough
egg wash

Method:

Start by making the pastry according to the recipe (do not skimp on the herb flavourings).

Mix together your choice of sausage meat filling. Simply work the spices/herbs into the meat with your hands until thoroughly incorporated.

Roll the pastry out onto a clean worktop or onto a chopping board and add a long layer of sausage meat. Egg-wash the sides and then roll it up and smother in egg wash. Trim any loose ends then cut into 3cm (1 in) pieces. Transfer to your air fryer.

Air fry for 10 minutes at 200°C (400°F) and serve.

A good trick here is to use a layer of foil in the base of your air fryer and then it will keep your air fryer clean.
