Ingredients:
225g Plain (All Purpose) Flour
100g Unsalted Butter, diced
ice cold water, as needed
For Savoury Pastry:
1 tsp Dried Mixed Herbs
Salt and freshly-ground black Pepper, to taste
For Sweet Pastry:
½ Tsp Mixed Spice
30gg Granulated Sugar
Method:
Sift the flour into a bowl then whisk in the herbs, salt and black pepper if making savoury pastry and the mixed spice and granulated sugar if making sweet pastry.
Add the butter and rub in with your fingertips until the mixture resembles breadcrumbs.
Now slowly blend in the cold water a tablespoon at a time, mixing with a knife and then your hands until the ingredients come together as a dough.
Knead the dough for a few minutes until soft and smooth. Chill in the refrigerator for at least 20 minutes before use.
