I love oat biscuits (cookies made from rolled oats) and was very excited to see this recipe adapted for the air fryer. I replaced the raisins in the original with craisins and reduced the sugar content as well. The final raisin gives wonderful golden and oaty biscuits (cookies) that are great with a cup of tea or coffee.

Ingredients:

500g (1 lb) Oats
250ml (1 cup) oil (vegetable)
100g (1/2 cup) sugar
3 tbsp runny honey
120g (1 cup) plain (all-purpose) flour
160g (1 cup) craisins (or you can use raisins or currants)
½ tsp ground cinnamon
2 eggs
1 tsp vanilla extract

Method:

Combine the oats, flour, and ground cinnamon in a mixing bowl.

Whisk together the eggs, oil, sugar, and vanilla extract in a separate bowl, beating until the sugar is fully dissolved.

Now add the dry ingredients to the wet mixture, mixing until combined.

Turn the mixture onto your work surface, pat down until about 1cm (1/2 in) thick then cut out rounds with a pastry (cookie) cutter. Pat any leftover dough together, re-flatten and cut out more biscuit rounds.

Pre-heat your air fryer at 180°C (360F) for 3-5 minutes.

Lightly grease the air-fryer basket and transfer the biscuits inside, arranging them in a single layer. Cook in the pre-heated air-fryer for 10-12 minutes. Flip them over half-way through the cooking process.

Allow to cool in the air-fryer so they harden, remove the oat biscuits from the air fryer and serve.
