I love kale, and I am always buying big bunches. Of course, that means there are frequently leftovers and I often deep fried these to make chips (crisps) so I was really intrigued to try air fryer kale chips as they came out bright green, were crispy and did not need to be cooked with much oil. If you’re into wild foods this recipe also works for nettle leaves as a direct swap.
Ingredients:
1 bunch of Kale leaves (or nettle leaves)
Olive oil
Salt and Pepper to taste
Method:
Pick over the kale leaves and discard any yellowed one. Rinse them thoroughly until they’re dirt-free, then pat dry with a paper towel or a clean kitchen towel.
Once the kale leaves are completely dry tear them into 12.5-15cm 5-6 in long pieces, removing any tough stems. If you’re thinking this too big don’t worry, they’ll reduce in size significantly while cooking.
Add the kale leaf pieces to a large mixing bowl and place the prepared kale leaves and pour the oil over the leaves and sprinkle over salt and black pepper to taste. Toss them together until they’re combined well.
Transfer the seasoned kale leaves to your air-fryer basket. Don’t overcrowd the basket and make sure they are an even layer. Cook at 185°C (370°F) for 5 minutes or until the edges turn golden.
Remove the air fryer kale chips from the air fryer basket and serve.
