Known as zucchini noodles (or zoodles) in the USA, these are courgettes (zucchini) that are turned into strips with a spiralizer. They can be boiled, roasted or air-fried and used as a vegetable alternative to pasta in pasta recipes. These are easiest to make with a spiralizer, though if your knife skills are good, you can slice the courgette lengthways into sections and then slice these sections into thin strips.
Ingredients:
2 courgettes (zucchini) cut into noodle lengths (easiest if you use a spiralizer)
1 tbsp olive oil
1/4 tsp garlic powder
1/4 tsp salt
Method:
Lay 2 paper towels folded in half into a bowl. Use a spiralizer to cut your courgette (zucchini) and then place into bowl.
Microwave for 2 minutes on HIGH to soften slightly. Take out and put another paper towel on top, then gently press down to absorb any moisture from the top of the noodles.
Return to the bowl and drizzle with olive oil and seasonings, then toss together.
Pre-heat your air fryer to 300°C (400°F) for 5 minutes. Add the zoodles and arrange so they overlap as little as possible. Transfer to your air-fryer and cook for 4-5 minutes until tender (but with a little crisp on the edges).
Serve with air-fryer bolognese sauce or air fryer tomato/marinara sauce for a vegetarian version.
