Air Fryer Brownies

If you want moist, gooey brownies with a crackle to the top then the air fryer is the way to go. After all, an air fryer is effectively a convection oven. For this recipe I used a greased solid cake tin (one that fitted in my air fryer) lined with greaseproof (waxed) paper.

Ingredients:

125g (4.4 oz) unsalted butter, chopped
150 g (5 1/2 oz) baking chocolate, chopped
75 g (2 1/2 oz) brown sugar
75 g (2 1/2 oz) sugar
1 egg, lightly beaten
200g (7 oz) ground almonds (almond flour)
30 g (1 oz) unsweetened cocoa powder
1 tsp vanilla extract
1/4 tsp salt

Method:

Preheat the Air Fryer to 160°C (320°F). Grease and line a 20cm (8 inch) baking tin, make sure it will fit in your air fryer.
Place a bowl over a saucepan of simmering water, making sure the bowl does not touch the water. Add the butter and chocolate. Cook until melted, stirring constantly. Take the chocolate mixture off the heat and quickly stir in the sugars, egg, ground almonds, cocoa powder, vanilla, and salt. Stir well until combined.

Pour the batter into the prepared baking tin. Transfer into the pre-heated air-fryer and bake for 25 minutes, or until a skewer inserted into the centre of the cake emerges with only crumbs sticking to it (in all reality, this is a moist cake and the skewer will never emerge cleanly from the cake).

Remove from the air fryer and allow to cool completely before cutting into squares and serving or storing.

As with any cake recipe, if your brownie is starting to burn on top, cover it with aluminium foil. The foil will prevent the top from overcooking while allowing the brownie to cook correctly.

You can serve the brownie warm (it’s lovely) but if you want to do this, it’s better to serve as a dessert (in a bowl with ice cream) as it may fall apart and not keep its shape.
