Air Fryer Blueberry Baked Oats

An interesting cake-like breakfast dish that can be prepared in an air fryer.
Ingredients:
2 eggs
400ml milk
4 tbsp runny honey (or maple syrup)
200g porridge oats
2 tsp baking powder
generous pinch salt
100g fresh or frozen blueberries
plain yoghurt, to accompany (optional)
Method:
Combine the eggs, milk and honey in a large bowl then beat together with a whisk. Add the oats, baking powder and salt, stirring until well mixed. If you have time, leave to sit for at least 5–10 minutes so the oats can soak up the milk.
Pre-heat your air fryer to 175°C.
Divide the mixture between four small heatproof dishes or 150ml ramekins and then scatter over the blueberries.
Place in your air fryer and cook for 10–12 minutes until golden and set. Serve warm or chilled, topped with a spoonful of yoghurt, if desired.
For an even speedier breakfast you can prepare the mixture the night before and store covered in the refrigerator over night. Remember to remove from the fridge to allow to come to room temperature before topping with blueberries and cooking.
If you don't have an air fryer you can bake these in an oven preheated to 200°C (180°C Fan/Gas Mark 6) for 20-25 minutes.
