Black pudding is a blood-based sausage where the blood is absorbed by oats and it’s packed into sausage type skins with pork fat. A true haggis is a blend of spiced minced lamb’s pluck and oats stuffed into a sheep’s stomach. Both haggis and black pudding are boiled to cook before being sold. A true haggis would burst and spill all over the air fryer. However, you can get haggis in a more sausage shape and pre-sliced haggis. Both this and black pudding are suitable for air frying and as they cook the same, I’m presenting as either/or here. I really like black pudding for breakfast. However, as I always have black pudding in the house, I will fry some, quarter them then add to curry leftovers with some beans. Pop this in the microwave for 5 minutes, serve with mini naan breads and you have a quick and easy lunch.

Ingredients:

8 black pudding or haggis slices (about 1.5cm [1/2 in] thick)

Method:

If your black pudding is still frozen cook your roll of black pudding in the air fryer for 6 minutes at 80°C (180°F) as this will make is soft enough to slice.

Slice and as you slice remove the black pudding wrapper. Place these slices in the air fryer basket and cook for 9 minutes at 180°C (360°F). Serve hot.

For thicker slices you will, of course, need to extend your cooking time. Also, as air fryers differ in power yours may cook slightly quicker than mine (for comparison my air fryer is rated 1500W).
