This is a classic banana bread cooked in an air fryer.

Ingredients:

60g (1/2 cup) plain (all-purpose) flour
1 ripe banana
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp cinnamon powder
1/8 tsp sea salt
2 tbsp unsalted butter at room temperature
55g (1/4 cup) brown sugar
1 large egg
1/4 tsp vanilla extract
1/2 tbsp plain yogurt
2 tbsp raisins (optional)

Method:

Combine the plain (all-purpose) flour, baking powder, baking soda, salt and ground cinnamon in a bowl and whisk together.

Mash the banana until in another bowl with the aid of a fork. Spray an air-fryer cake tin or tube with oil then sprinkle over some flour to coat (this will stop the cake from sticking). Set aside.

Cream together the butter and sugar in a bowl until pale and creamy. Add the egg vanilla extract, beating thoroughly to combine. Add the yoghurt and beat in with a fork then mix in the mashed banana.

Fold in the dry ingredients, mixing so that they are well combined, with no lumps (but take care not to over-mix).

Pre-heat your air fryer to 160°C (325°F) for 3 minutes.

Pour your batter into the prepared cake tube (if you have a small cake tin, only add half the batter and bake in two batches. Transfer to your pre-heated air-fryer and bake for 30 minutes. The banana bread is ready when golden brown on top and a skewer inserted into the centre emerges cleanly.

Transfer to a wire rack and allow to cool for 20 minutes before turning out. Slice and serve slightly warm.
