Aioan Chua Noeung Phset Kretni (Stir-fried Chicken with Mushrooms) a Classic Cambodian recipe for a stir-fry dish of chicken cooked with ginger and garlic that's finished with Chinese mushrooms in a syrup base.
Wash the mushrooms, place in a bowl then cover with water and set aside to soak for 30 minutes. After this time, squeeze any excess water from the mushrooms. Trim off the stems then cut the caps into four equal quarters.
Cut the chicken into small pieces (use a cleaver to cut through bones and flesh). Heat the oil in a wok, add the garlic and ginger. Fry for a few seconds then add the chicken pieces and stir-fry until golden brown all over. Add the mushrooms at this point, along with the water and sugar.
Bring to a simmer, cover and cook until the chicken is done through and tender (about 35 minutes). Sprinkle the chopped coriander over everything. Serve hot, accompanied by rice.
