Ai Manas is a traditional chilli and lemon based condiment from East Timor that is both used as a flavouring for a range of dishes and is served as a condiment to accompany meals. It can also be served as a meal with rice, with the Ai Manas used to flavour the rice.
In this case the basic ai manas is blended with eggs as a spicy and protein-rich dish.
Ingredients:
8 hard-boiled eggs
oil for deep frying
115g fresh Thai birds' eye chillies (a mix of red and green)
2 shallots minced
4 garlic cloves minced
1 sprig Thai basil
5cm piece of fresh ginger, grated
3 tbsp lemon juice
finely-grated zest of 1 Lemon
salt to taste
Method:
Peel the hard boiled eggs then fry in oil over medium-high heat until the eggs turn brown.
Remove the eggs with a slotted spoon and drain on kitchen paper.
For the chilli paste: Combine all ingredients into a food processor or blender and mix well, season with salt to taste
