Ingredients:

1 whole chicken, rinsed and patted dry
2 tbsp Afghan chicken spice blend
1 tbsp garlic, minced
salt and freshly-ground black pepper, to taste
1 lemon, halved

Method:

Set the chicken in a roasting tin, preferably on a roasting rack so it's not sitting in its own fat.

In a small bowl stir together the spice blend, the garlic and the seasonings. Squeeze both halves of the lemon over the chicken and then stuff into the cavity of the bird. Gently pat the spice rub evenly over the entire chicken.

Transfer the chicken to an oven pre-heated to 190C and roast for about 80 minutes, until the chicken is cook through and tender.
