A vegetarian dish from Abkhazia of red kidney beans in a walnut sauce.
Ingredients:
400g dry red kidney beans
2 garlic cloves, finely chopped
125g walnuts, chopped
1 bunch coriander, stems and leaves finely chopped
1 onion, finely diced
150g butter, for frying
salt and freshly-ground black pepper, to taste
Method:
Soak the beans in a large bowl of water over night.
The following day, drain and wash the beans then place in a large saucepan and cover with plenty of water. Bring to a boil, reduce to a simmer and cook for 2 hours, until the beans are fully tender.
In the meantime, melt the butter in a deep frying pan over medium heat. Add the walnuts, garlic and onion and fry for 3 minutes.
Take the kidney beans off the heat then pour off any excess liquid (you just need enough left to help mash the beans). Now mash the beans with a potato masher to a coarse paste. Add the butter and the fried nuts and onion along with the garlic.
Mash again to mix thoroughly then set aside to cool before serving.
