This cake icing derives its name from the 20 minute time period required to make it (and, yes, the timing here is important). It's also sometimes known as ermine frosting.

Ingredients:

5 tbsp plain flour
240ml milk
100g butter
200g granulated sugar
1 tsp vanilla extract
pinch of salt

Method:

Whisk together the flour and milk in a pan, place over medium heat and bring to a simmer. Continue cooking, stirring continually, until the mixture is almost too thick to stir. Take off the heat and set aside.

In the meantime, combine the butter, sugar and vanilla extract in a bowl and beat until the mixture is light and fluffy. Add the salt and beat for 10 minutes with an electric mixture. Now add the cooked flour mix and beat for 10 more minutes.

Use to coat the top and sides of your favourite cake. Decorate with fruit and nuts, if desired.
