This is a classic Martinican cake with a shortcrust pastry base topped with jam (guava, banana or coconut typically), the 'hidden love' of the cake topped with a yeast leavened sponge.
Ingredients:
300g of plain flour
200g of butter
120g of sugar
4 eggs
2 tbsp vanilla sugar
7g (1 sachet) active, dry yeast
1 tsp ground Cinnamon
finely-grated zest of 1 lime
1 batch
Pâte Brisée or
sablée selon (shortcrust pastry) according to your preference
150g
coconut jam
150g of jam (
guava jam, or
banana jam)
Method:
If you are using frozen shortbread pastry and not making your own thawing it first.
Preheat your oven to 180°C.
In a bowl, beat together the sugar with the vanilla sugar and the eggs. Add the melted butter and beat until the mixture whitens.
In a separate bowl, mix the flour with the yeast then pour into the liquid ingredients. Add the powdered cinnamon and the grated lemon zest and beat to combine. Set aside until required.
Roll out the shortcrust dough then use to line your pie dish. Spread the coconut jam over the pastry base then add the guava or banana jam on top.
Pour over the cake batter, then even out with a spatula. Transfer to the centre of your pre-heated oven and bake for 20 minutes.
When the top of the cake is golden, remove it from the oven and un-mould it. Allow to cool slightly, but serve warm, sliced into wedges.
