Translation
A Royal Dish
Take Greek wine, or Rhineland wine and mix with clarified honey. Take rice flour, ground ginger or ground pepper and cinnamon or ground cinnamon, ground cloves, saffron, Cyprus sugar, mulberries or sandalwood. Mix all these together. Boil it and season with salt and ensure that it is stiff and serve it forth.
Modern Redaction
Ingredients:
400ml white Greek or Riesling wine
200g clear honey
4 tbsp rice flour
1 tsp ground
ginger (or freshly-ground black pepper)
1 tsp ground
cinnamon
1/2 tsp ground
cloves
1/4 tsp
saffron
4 tbsp golden caster sugar
4 tbsp mulberries or blackberries
salt, to taste
Method:
Combine the wine and honey in a pan. Bring to a simmer then whisk in the rice flour along with the ginger, cinnamon, cloves, saffron, sugar and fruit. Mix thoroughly together.
Continue cooking, stirring constantly, until the mixture is stiff. Season to taste with salt and serve immediately.
