Vert desire. Milke of alemaundes, flour of ris, braun of chapoun, red wyn, sucre, percelie; pe colour schal beo grene.
Translation
Take almond milk, rice flour, chicken meat, red wine, sugar and parsley. The colour shall be green.
Modern Redaction
Ingredients:
400ml
Almond milk (made with red wine)
300g cooked chicken, minced
3 tbsp rice flour
sugar to taste
salt to taste
1 bunch of flat-leaf parsley
Method:
Cop the parsley, stems and leaves. Place in a pan and just cover with water. Bring to a boil and cook for 5 minutes,. Take off the heat and set aside to cool. Pound to a paste in a mortar then drain or squeeze through a tammy sieve to yield a bright green liquid.
Add the almond milk to a pan, stir in the rice flour and add the chicken. Bring to a boil then reduce to a simmer and cook for 20 minutes, or until the mixture thickens appreciably.
Add salt and sugar to taste then stir in the parsley purée liquid so the sauce turns bright green. Serve it immediately in bowls.
