Verde Sawſe

Take p̲ſel. mynt. garlek, a litul serpell and ſawge, a litul canel, gyngr. pi̲. wyne. brede. vynegr et ſalt grynde it ſmal wt ſafronn et meſſe it forth.
Modern Redaction
Ingredients:
250g finely-chopped fresh herbs (parsley, thyme, tarragon, mint, savory, marjoram)
3 cloves garlic, crushed and minced
½ tsp cinnamon
½ tsp ground ginger
½ tsp salt
6 strands saffron
120ml vinegar (white wine or cider)
80ml red wine
Method:
Finely-chop the herbs and garlic. Add all the other ingredients, mix well and then leave to infuse for half an hour. Stir again and serve either with sliced French bread or with sliced roast meat.
