Ꞇe pouꝺo of galyngale wiþ sugꝰ anꝺ ſalꞇ anꝺ boyle hiꞇ yſere · ꞇake breꝺe y ꞇoſteꝺ +̅ lay þe ſewe onowarꝺ [+̅ sꝰue hiꞇ forꞇh]
Translation
Sops of Galingale
Take powdered galingale with sugar and salt and boil it together. Take toasted bread and pour the sauce over it and serve it forth.
Modern Redaction
Ingredients:
200g sugar
2 tbsp water
2 tbsp powdered
galingale
salt, to taste
6 slices of
bread, toasted and quartered into triangles
Method:
Combine the sugar, water and galingale in a pan. Bring to a boil, stirring constantly then season with salt to taste. Take off the heat and set aside to cool slightly.
Toast the bread and quarter into triangles. Arrange these in overlapping patterns on a serving dish and pour over the sugar syrup. Allow to cool slightly and serve as a sweet and sticky dessert.
