Sobre Sauce

Translation



Prudent Sauce



Take raisins and grind them with crusts of bread and strain it up with wine. Add to this good powders and salt and boil it. Fry roaches, loaches, soles or other good fish, pour over the sauce and serve it forth.

Modern Redaction


Ingredients:

150g raisins
6 tbsp bread
300ml white wine
2 tsp good powder
salt, to taste

Method:

Pound together the raisins and bread in a mortar (or puree in a blender). Work in the wine then turn into a pan.

Bring to a boil, reduce to a simmer and cook until thickened. Use as a sauce to pour over fried fish.
