Translation
Plaice in Spiced Bread Sauce
Take plaice and chop to pieces and fry them in oil. Strain a liaison of
bread and good broth and vinegar and add to this powdered ginger, pepper and cinnamon and salt. Colour it with green goose fat and ensure that it's not cooked too stiff.
Modern Redaction
Ingredients:

plaice fillets, chopped
3 tbsp oil
300ml
good broth
60g breadcrumbs
60ml white wine vinegar
1/2 tsp ground ginger
1/4 tsp freshly-ground black pepper
1/2 tsp ground cinnamon
salt, to taste
green food colouring
Method:
Heat the oil in a pan, add the plaice fillets and fry until cooked through. Combine the breadcrumbs, broth and oil in a bowl and set aside to stand for 10 minutes. Pass this mixture through a fine-meshed sieve then combine with the plaice.
Season with the ginger, black pepper, cinnamon and salt. Bring to a boil and cook until thick (but not too thick). Colour with a little green food colouring and serve it forth.
