240g blawd plaen
90g menyn
180g siwgwr brown
180g ffrwythau sych cymysg
1 llwy de o beicarboand o soda
1/2 llwy de o sbeis cymysg
1/2 llwy de o sinamwn
1/4 llwy de o nytmeg
60g o gnau Ffrengig
1 ŵy
300ml o ddŵr

Dull:

Hidlwch y blawd a'r beicoarboand o soda i fowlen cyn ychwanegu'r sbeis cymysg, sinamwn, nymeg a'r cnau Ffrengig. Yn y cyfamser rhoddwch y ffrwythau sychion, dŵr a'r menyn mewn sosban. Dowch a'r gymysgfa i ferwi a berwch am 10 munud. Ychwanegwch y gymysgfa i'r blawd, gan gymysgu i fewn yn drwyadl. Gadewch i'r gymysgfa oeir yna ychwanegwch yr ŵy a churwch i fewn. Trosglwyddwch y gymysgfa i dun torth 1kg (wedi ei iro'n dda) a gosodwch mewn popty wedi ei gynhesu i 170°C a phobwch am tua 80 munud neu nes fod pen y gacen wedi brownio a fod sgiwer wedi ei gosod yng nghanol y gacen yn dod allan yn lân. Gadewch y dorth fraith i oeri yn y tun am 10 munud cyn trosglwyddo i resel gwifren i oeri'n gyfan gwbwl.

English Translation


Troth Fraith (Mottled Bread) is another (but much less well known) classic Welsh fruited tea bread. It's very similar to bara brith in terms of constituents but does not contain tea.

Ingredients:

240g plain flour
90g butter
180g brown sugar
180g mixed dried fruit
1 tsp bicarbonate of soda
1/2 tsp mixed spice
1/2 tsp ground cinnamon
1/4 tsp freshly-grated nutmeg
60g walnuts, chopped
1 egg
30ml water

Method:

Sift the flour and bicarbonate of soda into a bowl before adding the mixed spice, cinnamon, nutmeg and the walnuts.

In the meantime place the dried fruit, water and butter in a saucepan. Bring the mixture to a boil and continue boiling for 10 minutes before taking off the heat and pouring onto the flour mix. Mix thoroughly then allow to cool a little before adding the egg and beating to combine.

Transfer the mixture to a well-greased 1kg loaf tin and transfer to an oven pre-heated to 150°C. Bake for about 90 minutes, or until the top of the loaf is nicely browned and a skewer inserted into the centre of the cake emerges cleanly.

Allow the torth fraith to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
