English Translation
Traditionally this cake was baked in a cast iron casserole (Dutch oven) in front of an open fire; though today it can be baked in a tin either under a grill (broiler), keeping the cake fairly low beneath it, or in a farily hot oven.
Ingredients:
400g (two cupfuls) rice
a little salt
water
450g plain flour
225g butter
1 tsp baking powder
4 eggs
milk
sugar (to taste)
a little grated nutmeg
Method:
Bring a pan of salted water to a boil. Add the rice and cook for about 15 minutes, or until soft and fluffy.
Rub the butter into the flour and baking powder then work in the cooked rice and all the dry ingredients (adding sugar to taste).
Finally add the eggs along with a little nutmeg and enough milk to yield a cake batter like consistency. Turn into a greased shallow tin then transfer to an oven pre-heated to 190C and bake for about 40 minutes, or until the top is golden brown and a skewer inserted into the centre of the cake emerges cleanly.
