Ingredients:

450g potatoes, peeled, boiled, drained and cooled
3 tbsp plain flour
2 tbsp brown sugar
1 tsp baking powder
1/4 tsp ground cinnamon

Method:

Mash and beat the potatoes until smooth then add all the remaining ingredients and mix thoroughly. Turn the mixture into a well-greased loaf tin. Level the top of the cake before transferring to an oven pre-heated to 200°C. Bake for 10 minutes then turn down the oven temperature to 160°C and bake for 80 minutes longer.

Allow the cake to cool in its tin for 10 minutes then turn onto a wire rack and allow to cool before slicing, spreading with butter and serving. The potato cake can be served either hot or cold.
