Sewin yn y Badell (Pan-fried Sea Trout) is a classic Cymric (Welsh) for a traditional dish of sea trout fillets that are pan-fried and finished with spring onions, white wine, lemon juice and bacon. Cynhwysion:

4 o ffiledi sewin (tua 175g yr un)
1 clwstwr o sibwns, wedi eu torri
2 llwy fwrdd o olew olewydd
1 llwy fwrdd o fenyn
halen a phupur du, at flas
300ml o win gwyn sych
sudd 1 lemwn
50g o gig moch wedi ysmygu, wedi ei dorri

Dull:

Tynnwch unrhyw esgyrn bychan o'r ffiledi sewin yna ychwanegwch halen, pupur du a sudd lemwn at flas. Cynheswch yr olew olewydd a'r menyn mewn padell ffrio a pan yn ewynu, ychwanegwch y ffiledi, gan eu ffrio yn ysgafn am 1 funud pob ochor. Nawr ychwanegwch y cig moch, sibwns a'r gwîn gan ddod a'r gymysgedd i ferwi. Coginiwch am 10 munud nes fod y pysgodyn yn barod. Gweinwch y pysgodyn ar wely o lysiau ffrés. Arllwyswch y saws o'r badell drostynt gyda llwy a gweinwch gyda thatws wedi ffrio.

Method:

Remove any pin bones from the sea trout fillets then season with salt, black pepper and lemon juice.

Heat the olive oil and butter in a frying pan and when foaming add the fish fillets and fry gently for 1 minute per side.

Add the bacon, spring onions and wine, bring to a boil and cook for 10 minutes, until the fish is done through. Serve the fish on a bed of fried vegetables. Spoon over the sauce and accompany with fried potatoes.
