Ingredients:
240g self-raising flour
120g butter
120g caster sugar
1 egg
a drop of milk
240g of the flesh of apples, diced
Method:
Sift the flour into a bowl before cutting the butter into small cubes and adding to the bowl. Rub the butter into the flour with your fingertips until the mixture resembles fine breadcrumbs.
Add the egg, before beating into the mix and adding the sugar, milk and apples. Combine all the ingredients very thoroughly before transferring to a baking dish. Transfer to an oven pre-heated to 180°C and bake for about 35 minutes, or until the top of the cake is golden brown and a skewer inserted into the centre of the cake emerges cleanly.
You can serve immediately as a dessert, accompanied with custard, or you can allow the cake to cool and serve it with tea.
